The soils of the "Vin Doux Naturel" are found along the Mediterranean, on the terraces of a vast
amphitheatre ranging from the foothills of the Pyrenees, in Roussillon, to those of the Alps, in
Provence, and in Corsica and in the Greek Islands of the Aegean Sea.
Since the 13th century, the Fortified Wines have been produced by a rigorous process: the process consists of adding a wine-based neutral alcohol to the must of grapes in the process of fermentation in order to stop it and thus retain one part of the grape sugars that will give the sweetness to the wine.
These wines are made from a variety of vines limited to “noble” vines: Grenache, Macabeu, Malvoisie of Roussillon and Muscat.
